Black Beans Tomato Wrap

Tomatoes are loaded with a substance called lycopene. It gives them their bright red color and helps protect them from the sun's ultraviolet rays. In much the same way, it can help protect your cells from damage. 

Lycopene is an antioxidant -- it fights molecules called free radicals that can damage your cells and affect your immune system. Because of that, foods high in lycopene, like tomatoes, may make you less likely to have lung, stomach, or prostate cancer. Tomatoes also have potassium, vitamins B and E, and other nutrients. 

Other nutrients in tomatoes, like vitamins B and E and antioxidants called flavonoids, may boost your heart health, too. Some research shows they might also help prevent the disease in the pancreas, colon, throat, mouth, breast, and cervix. Lycopene may also help lower your LDL, or "bad" cholesterol, and blood pressure levels. And that may reduce your chances of heart disease.

Ingredients

  • One spinach tortilla, yes they are my favorite
  • ¼ cup arugula
  • Five grape tomatoes cut in half
  • ¼ cup shredded cheddar cheese
  • ½ cup black beans
  • Dried basil 

Preparation

  • Place the spinach tortilla in a frying pan and heat it at low temperature until a little warm
  • Once the tortilla is warm, take it out of the pan and put it on a plate
  • Add the below toppings a little the bottom of the tortilla
    • Arugula
    • Shredded cheese
    • Grape tomatoes
    • Basil
    • Black beans
  • Once all ingredients are in place
  • Take the tortilla and roll it up from the bottom up
  • Rotate the tortilla
  • Roll up from the bottom up
  • Wrap ready to put in the oven and back into the frying pan
  • If you decide to put it In the oven, the time frame to cook will be 3 to 5 min at 350F
  • If you choose to heat it in the frying pan, the cooking time is about 2 to 4 minutes at a Medium temperature
  • The wrap should be a little tanned and ready to eat
