  • low-fat cream cheese (spread), at room temperature
  • Sweetened Condensed Milk
  • Evaporated Milk
  • ½ cup lemon juice, plus 2 tsp. Freshly grated lemon peel (approximately four lemons), and additional lemon peel to decorate.
  • 1 pkg. (7 oz.) GOYA® Maria Cookies

Preparation

  • Mix the cheese spread and 2 teaspoons of lemon zest in a large bowl until well combined. Gradually add the condensed milk, beating by hand until well blended. Add the evaporated milk and lemon juice and beat until smooth and thick. With a spoon, spread half a cup of the mixture based on cream cheese in the bottom of a glass baking dish.
  • Top the cream cheese mixture with 9 Maria cookies arranged in a single layer. Carefully spread about ¾ cup of the cheese spread mixture on the crackers. Repeat layers three more times using ¾ cup of the cheese spread and 9 crackers per layer, ending with the remaining cheese spread. Cover the cake with transparent plastic and put it in the refrigerator. Let cool for a minimum of 8 hours or overnight. You can garnish the cake with lemon peel before serving
