Ingredients
  • One slice of eggplant*
  • 1 tbsp peanut butter
  • 2 tbsp avocado
  • 1/2 butter lettuce
  • 1 golden apple
  • 2 tbsp parmesan cheese
  • 1 tbsp dried cranberries
  • parsley at your preference
  • One butterhead lettuce
  • 1 cup shredded coconut
  • Dressing:
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic Glaze
Preparation

I picked a white plate and salad bowl as this salad is very colorful.

  1. Place butter lettuce on the plate
  2. Cut the half butter lettuce at your preferred size
  3. Place the eggplant slice on top of the lettuce
  4. Spread the peanut butter on top of the eggplant slice
  5. Add the avocado previously cut into small chunks
  6. Surround the eggplant with the apple previously cut into slices
  7. Spread around and on top of the apple the amount of parmesan cheese
  8. Add on top of the avocado the amount of parsley
  9. Finally decorate with dried cranberries
  10. Add the olive oil around the lettuce or as your preference
  11. Decorate the salad with the balsamic glaze
  12. Salad ready to enjoy!
