Ingredients
  • 1/2 butter lettuce
  • 2 tbsp of peanut butter
  • 3 tbsp parsley flowers
  • 3 strawberries cut into slices
  • 1 slice of Eggplant*
  • 15 Asiago cheese cubes
  • 2 tbsp of walnuts
  • 2 tbsp of dried cranberries
  • Dressing:
  • 1 tbsp Olive oil
  • 1 tbsp Balsamic Glaze
Preparation

I picked a white plate and salad bowl as this salad is very colorful.

  1. Place butter lettuce on the plate
  2. Cut it at your preferred size
  3. Place the eggplant slice on top of the lettuce
  4. Spread the peanut butter on top of the eggplant
  5. Nicely place on top the strawberries previously cut into slices
  6. Carefully surround the eggplant with the asiago cheese and the walnuts
  7. Spread around and on cheese and walnuts the amount of dried cranberries
  8. Add the olive oil around the lettuce or as your preference
  9. Decorate the salad with the balsamic glaze
  10. Salad ready to enjoy!
